A few years ago, despite all my aspirations to eat healthy, I found myself taking shortcuts in the kitchen that weren’t exactly healthy for us. Our daily schedules were so full that I began relying on take-out and prepared packaged items just to get dinner on the table in a hurry. I felt defeated that I couldn’t manage the task of feeding my family well. All that processed food wasn’t good for us. It felt like our meals always came in a box, and I wanted to get those boxes out of my kitchen. I wanted to unbox my kitchen. We needed to be eating freshly prepared meals full of whole grains, nut, fruits, and vegetables.
It was time to get ourselves back on track and find a way to make healthy eating effortless.
After a little trial and error, we found the secret to preparing fresh, real food every day (without getting stressed) is to have a good plan of action: make a meal plan for the week with a detailed shopping list; then, chop veggies and do some simple prep ahead of time. We usually do this on the weekends when we have more time. When we followed these steps, weeknight dinner was easily prepared in less than 30 minutes each night.
Fueling our bodies with healthy foods improved our moods and we slept better and had more energy too! Pretty soon, my friends started noticing and asked what our secret was. They wanted to say goodbye to boxed lasagna and frozen chicken nuggets too. So, I am sharing with you what I shared with them: unbox your kitchen! Get rid of the junk and just follow a plan!
