Who doesn’t love a classic PB&J? They pull together quickly and hit the spot with just the right combo of sweet and savory. For a fun twist on a classic, I decided to make a PB&J inspired quesadilla. You may recall, I’ve also done a grilled peanut butter and jelly sandwich.
For the quesadilla, I used 2 whole wheat tortillas. I slathered both tortillas with peanut butter and added chopped mixed berries to just one tortilla before sandwiching them together. I lightly grilled the quesadilla on my cast iron skillet until the filling was hot and melty.
Next time, I might try adding some sliced bananas too! Yum! You can skip the grilling if you want and just slice the quesadilla up and add to a lunch box. Or, I be this would be awesome for breakfast?
