Summer is around the corner, ya’ll! My kids only have 2 weeks of school left!
And, you know what that means around here?!? About every 30 minutes my kids will be asking me if they can have a popsicle. Well, perhaps I exaggerate, but it sure feels like they ask me 20 times a day. Luckily, I have several healthy popsicle recipes up my sleeves, so I can feel good about saying yes….at least half the time.
One of my personal favorite popsicles is this fresh fruit and yogurt popsicle. Not only do I love the ingredient list (2-2-2 is so easy to remember!), but it’s also light (but filling) and creamy. These fruit and yogurt popsicles really hit the spot on those 90 degree summer days. We change up the fruits frequently, but berries happen to be our favorite. Feel free to experiment and let me know what you like. Peaches and pineapple are equally mouth-watering.
Fresh Fruit & Yogurt Popsicles
No refined sugar. 100% delicious.
- 2 cups plain yogurt
- 2 cups bite sized fruit of choice fresh or frozen
- 2 Tbsp honey or maple syrup
Combine yogurt and honey/maple syrup in medium sized bowl.
Stir in fruit of choice
Fill popsicle molds with mixture and freeze for at least 2 hours before enjoying.
For a different texture, try blending all ingredients until smooth before filling popsicle molds.
