It’s always a little bit of stretch when cookies are marketed as “healthy”. Breakfast cookies, anyone? A cookie is a cookie, right. Well, yes. But, it is possible to make them better-for-you. These 3 ingredient peanut butter cookies have no flour and no refined sugar. So, that qualifies them as close to a healthy cookie as you can get. Add in some raisins or shredded coconut if you want to defy the 3 ingredient title! 🙂
These peanut butter cookies are awesome to store in the freezer and take out for a quick snack. They’re yummy even frozen or thawed.
3 ingredient (healthy) peanut butter cookies
Just 3 ingredients. Grain-free, dairy-free. No refined sugar.
- 1 cup peanut butter crunchy is yummy!
- 1 egg
- 1/3 cup honey
Preheat oven to 350F.
Mix all ingredients in bowl until smooth. Drop spoonfuls onto greased cookie sheet. Press down with fork.
Bake 8 minutes until golden brown on top. Cool 5 minutes before removing from pan.
Try almond butter for something different.
Try adding 1/3 cup raisins and/or shredded coconut.
