Sometimes you just need a quick and easy snack to get your through the afternoon slump. I know I do. These mango coconut energy bites will do the trick. You can quickly prep several mango coconut energy bites at once (this recipe makes about 8) and store them in the fridge. Then, when the snack cravings hit you, just grab 2 and you’re good to go until dinner time. They’re chock full of healthy protein and fruit sugars to fill you up and keep you going. Much better than eating potato chips or a candy bar.
Mango Coconut Energy Bites
The perfect healthy snack to tide you over until your next meal.
- 3/4 cup unsweetened dried mango soak in hot water 15 minutes
- 4 medjool dates, pitted soak in hot water 15 minutes
- 2/3 cup unsweetened shredded coconut
- 3/4 cup rolled oats
- 1 Tbsp almond butter
- 1 Tbsp coconut butter
- 1 tsp ground flax
- 1/4 tsp vanilla extract
- 1 pinch sea salt
After mango and dates have soaked in hot water, combine all ingredients using a food processor or high speed blender.
Roll into 1.5 inch balls. If outside is sticky, you can coat with additional rolled oats.
2 balls per serving. Store in refrigerator for up to 1 week.
